Wash and cut potatoes into 3/4"-1" cubes (you can remove the skins if you wish) then place them in a pot of water
Bring potatoes to a boil and allow to cook on medium for 10-15 minutes. Make sure to check them often. The potato should be cooked enough to eat but they should still look cubed. Once they are cooked too much they start to get mushy.
Remove from stove and shock the potatoes in ice water
Drain and place in a bowl
Add in the remaining ingredients and gently stir together with a spoon to avoid "mashing" the potatoes
Serve immediately or store in the fridge for up to a day
